FAQs

  • New Haven-style pizza, or “apizza,” combines the best of both worlds—it's a thin pie that’s crispy like NY-style pizza, with a chewy interior that’s reminiscent of Neapolitan-style pizza. Cooked at higher temperatures, it has a subtly smoky flavor and is surprisingly light, so you can enjoy a few slices without feeling overly full. It’s a true standout in the world of pizza.

  • It’s pronounced “ah-beets,” not “a-pizza.” It’s a little New Haven flair, so try it out next time you’re ordering!

  • Don’t worry, it’s not burned—it’s charred! The dark edges come from cooking the pizza at higher temperatures, which adds to the overall flavor. It’s a hallmark of New Haven-style pizza and all part of the charm!

  • While historic coal-fired bread ovens are used in some iconic New Haven pizzerias, the vast majority (over 90%) don’t actually use coal. In keeping with the scrappy spirit of New Haven, people use what they have available—coal, wood, gas, and electric are all fair game. It’s the heat and the final product, not necessarily the fuel, that makes New Haven-style pizza what it is!

  • Sorry, we only serve whole pies in keeping with New Haven tradition. Our pizzas are small and light enough to be considered a large personal pie, or you can get your friends in on it. Pizza is meant to be shared, after all!

  • No way! We also offer appetizers like gochujang wings, or our caesar salad with house-made dressing, as well as small-batch desserts like Earl Grey Basque cheesecake and dark chocolate toffee. Everything is made fresh from scratch in-house.

  • Ava and Kiki are our brand ambassadors, our CEOs, and CCOs (Chief Canine Officers). They are the goodest girls, both rescues, and probably get spoiled with more pizza crusts than almost any other dog. You can see them pictured to the left!
